FISH PIE WITH CHEESY POTATOES
          
Ingredients
  • 2 boneless salmon fillets
  • 2 boneless white fish fillets
  • 2 lbs potatoes, cubed
  • 3 Tbsp butter
  • 2 Tbsp heavy cream
  • Salt and pepper to taste
  • 2 cups cheddar cheese, grated
  • 2 Tbsp chives, chopped
 
Method
Set the EGG for indirect cooking with the convEGGtor at 400°F.
 
Season fish with salt and pepper, place fish on a perforated grid and cook until the fish flakes easily and the shrimp is opaque. Remove from the EGG and set aside.
 
In a Dutch oven, boil the potatoes until tender. Remove from the EGG, drain and mash. Mix in the heavy cream, butter, salt and pepper.
 
Place fish in the bottom of the Dutch oven. Top with potatoes and cheese. Place back on the EGG and cook 15-20 minutes or until heated thoroughly and the cheese is melted.
 
Top with chives.
