CEDAR-PLANKED RAINBOW TROUT WITH LEMON DILL TOPPING

Ingredients
  • 4 trout fillets
  • Sea salt
  • Black pepper

Lemon Topping
  • 2 Tbsp dill
  • 2 Tbsp parsley
  • 3 Tbsp lemon juice
  • 2 Tbsp olive oil
  • ½ tsp black pepper
  • Sea salt
  • 1 clove garlic, minced

  • Submerge two cedar planks in water for at least one hour.

  • Combine dill, parsley, lemon juice, oil, and garlic; set aside. Season fish with seasoned salt and pepper.

Method
  • Set the EGG for direct cooking without the convEGGtor at 375°F/190°C.
  • Place planks on grill for about two minutes or until they begin to smoke.
  • Flip the planks and place 2 fillets on each of the cedar planks. Cover and cook for 15-18 minutes or until done.

  • Remove planks; spoon Lemon Topping over the fish and serve immediately.
