GRILLED WALLEYE WITH MANGO SALSA
 
Ingredients
  • 1 large walleye fillet
  • 1 Tbsp olive oil
  • Salt and pepper to taste
 
Mango Salsa
  • 1 large mango, cubed
  • 1 large tomato, chopped
  • 2 Tbsp red onion, diced
  • 1 Tbsp cilantro, minced
  • 1 Tbsp lime juice
 
Method
  • Set the EGG for direct cooking with a Cast Iron Grid, flat side up, at 400°F/204°C.
 
  • Combine all ingredients for the mango salsa in a medium sized bowl. Stir to incorporate. Refrigerate until ready to serve.
 
  • Rub olive oil all over the walleye fillet and sprinkle the flesh side with salt and pepper. Place walleye fillet on the Cast Iron Grid, skin side down. Cook for 8-10 minutes, flipping half way through.
 
  • Serve with skin side down and garnish with mango salsa.
