JALAPENO STUFFED TURKEY BREAST
          
Ingredients

• 2 whole jalapenos
• 2 Tablespoons cream cheese
• 2 Tablespoons cheddar cheese
• 4 turkey breast
• Olive oil
• O’Neill Outside Spices


Method

Set the EGG for indirect cooking at 350°F/177°C. 

Wearing gloves, slice each jalapeno in half lengthwise.  Remove the seeds and inner membranes. Combine cream cheese and cheddar cheese. Fill each
jalapeno half with cream cheese. 

Cut a slit into each turkey breast; be careful not to cut all the way through. 
Place a jalapeno into each turkey breast; secure with a toothpick.

Rub each turkey breast with olive oil and sprinkle with seasoning and add to 
the V-Rack. Place the V-Rack into a drip pan to collect the juices for a gravy.

Roast turkey breast about 25 minutes, turning once until it is cooked thoroughly and reaches a temperature of 165°F.
